Rice with chicken, chorizo and peas

Ingredients:
- 10.5oz white rice (to taste)
- 10.5oz chicken breast diced
- 3.5oz Quijote Chorizo
- 1 Italian red pepper
- 1 green pepper
- 1 onion
- 1 can of peas
- 1/2 glass of homemade tomato sauce
- 1/2 liter of broth made from boiling some vegetables (or chicken)
- Extra virgin olive oil
- salt
Rice is one of the most commonly used foods in the kitchen because the list of ingredients you can add is endless, making all kinds of tasty combinations. On this occasion we suggest a simple recipe with chicken, vegetables and Palacios Chorizo for Cooking.
Elaboration:
Finely chop the onion and peppers. Heat oil (approx. 2 tablespoons) in a skillet and lightly fry the vegetables. After about 7 minutes, add the diced chicken and a little more salt, stir and leave to cook until the chicken is browned. Then add the chorizo cut into smaller cubes, stir everything well and allow the flavors to cook and combine for another 5 minutes.
Next add the rice, the tomato sauce and more salt. Stir everything well and add the hot vegetable stock. Put on a medium-strong heat and leave to simmer for 5 minutes. Then lower the heat to medium and leave to cook until the rice is done. Add the can of peas. Add a little more hot broth if required to finish cooking.
Comment:
Here we have a dish that provides carbohydrates from the rice and protein from the chicken and chorizo (also fat). It isn't a light dish but it isn't a really heavy one either, since the quantities are not excessive. You can eat it on its own or pair up with a fresh curly endive salad.
