Roast potatoes, with chorizo and red peppers

Ingredients:

  • 5 egg-sized potatoes cut into quarters
  • 2 onions cut into quarters
  • 7oz sliced Quijote Chorizo
  • 2 sliced sweet Italian red peppers
  • 5 tablespoons extra virgin olive oil
  • 2 crushed cloves of garlic
  • 1/2 tablespoon of oregano
  • salt and pepper to taste

This recipe that is cooked in the oven is perfect for a gathering at home, combined with other snacks or as a side dish for roast meat or fish. It is tasty and nutritious, so everyone will like it!

Elaboration:

  • First cook the potatoes for 5 minutes. If you steam them they will be tastier and lose fewer nutrients.

  • In the meantime preheat the oven to 356ºF.

  • When the 5 minutes is up, drain the potatoes and put to one side.

  • In a separate bowl, mix the oil, garlic, oregano, salt and pepper.

  • In a baking dish distribute the potatoes, chopped peppers and onion and coat everything with the oil mixture.

  • Add the sliced chorizo and bake everything for 30 minutes.

  • Every 10 minutes open the oven, stir and check that nothing has burnt.

  • Take out of the oven and serve hot.

Comment:

The potato is a food that mainly provides carbohydrates. Boiled or roasted it does not contain many calories and is one of the most filling foods, very important when we finish eating. It is a source of B vitamins, potassium and vitamin C.

When it is steamed it retains more nutrients than if you boil it in water.

It is low in protein and fat.
