Ingredients:

  • Quijote Chorizo
  • Medium-sized mushrooms
  • Onion
  • Freshly ground black pepper
  • Salt
  • Extra virgin olive oil

In summer everyone loves a barbecue. So this month we propose a simple and tasty skewer perfect for barbecuing, but you can also make it on the grill. It's up to you.

Elaboration:

  • The secret to preparing skewers is to cut all the ingredients to a similar size so that they cook at the same time.

  • Start by slicing the chorizo into 2 centimeter-thick slices.

  • Then clean the mushrooms thoroughly and cut them in half (or whatever you consider best, depending on the size). Now you just need to chop the onion into wedges.

  • Season the mushrooms and onion and sprinkle a little olive oil over them.

  • Place all the ingredients on the skewer sticks, alternating onion-mushroom-chorizo and so on.

  • Once the barbecue is ready, cook the skewers and enjoy.

Comment:

This dish provides fat and protein from the chorizo and some fiber and beneficial properties from the vegetables. Assuming that two skewers will be consumed per person, the barbecue on its own is not enough. So we will have to complete the meal. What shall we add to the party? In order to introduce some more plant-based foods, some snacking olives and a cool gazpacho seem like a good start. And to round it off we could make some more skewers with shrimp and octopus.
