Ingredients:

  • 1 onion
  • 2 cloves of garlic
  • 1 red pepper
  • 4 medium potatoes
  • ½ Quijote Chorizo for Cooking (approx. 120g)
  • 350g stewing beef
  • Extra virgin olive oil
  • 1 Cayenne pepper
  • 1 bay leaf
  • Salt

Making a traditional stew is easier than you might think. You just have to give it a go, with a little bit of patience and love. Here we show you how to make one using beef and Palacios Chorizo for Cooking.

Elaboration:

  • Start by lightly frying the chopped garlic, onion and red pepper. Before they turn golden brown, add the Cayenne to release its essence.

  • Meanwhile, peel and chop the potatoes and cut the meat and the Palacios Chorizo for Cooking into pieces. Add them all to the casserole dish, season with salt, stir and leave to brown. After about 5 minutes add the bay leaf and cover with water. Stir well and leave to simmer for 20 minutes. When the potatoes are cooked the stew is ready.

Comment:

It is a great idea to accompany this dish with steamed vegetables (e.g. broccoli and carrots). Our main recipe provides fat and protein (from the meat and the chorizo) and carbohydrates (from the potatoes). It is quite a filling dish, but by adding vegetables we reduce the overall calories of the meal.
